1. Preheat the oven to 325°F (160°C). Line two baking sheets with parchment paper.
2. In a large bowl, beat the egg whites, sugar, salt, and vanilla extract until frothy.
3. Fold in the shredded coconut until evenly mixed. Drop rounded tablespoons of the mixture onto the prepared baking sheets, spacing them about 1 inch apart.
4. Bake for 18-20 minutes, or until the macaroons are golden brown. Allow to cool completely on the baking sheets.
5. If desired, drizzle the cooled macaroons with melted chocolate. Let the chocolate set before serving.
